The Ottomans were comparitively lenient on their religious laws. They didn't mass murder non-sunni-muslims like christians did at the time, so that was pretty tolerant. I can't tell you much beyond that, but I believe non-muslims had to pay a tax. One way they were not tolerant was their use of the Janisseries. They took young children from non-muslim's homes, converted them to Islam, and trained them as an elite soldier force.
