The complex carbohydrate form of a sugar that is stored in the liver and muscles is polysaccharides. They are long chain sugar units and are polymers of monosaccharides. Polysaccharides were room form of carbohydrate in human and some animals, similar in construction to starch but more branches, can break off a glucose simply with branches because enzymes start at the outside and undetectable in meats because glycogen breaks down as soon as animal is slaughtered.  The three main polysaccharides related to the human nutrition includes the following: 1. Starch that is an energy source obtained from plants. 2. Cellulose that is structural polysaccharides in plants and when consumed acts as a dietary fiber. 3. Glycogen that is a storage form of glucose in the human liver and muscles.
